An easy recipe for the kind of soft, fluffy rice you would expect at a top Indian restaurant.

  • 160 g white basmati rice (allow approx. 80 g of uncooked rice per person)
  • ½ teaspoon salt
  • water


Rince the rice thoroughly then soak in plenty of cold water for 20-30 minutes.

Add the rice and salt to a large saucepan of boiling water and boil for 3-5 minutes.

Rinse the rice in cold water to stop it cooking further, and empty the water from the saucepan.

Return the rice to the (empty) saucepan and cook on a very low temperature for a approximately 3 minutes, until any remaining water has evaporated.

Add the rice to an ovenproof dish and heat in the oven (approx. 180°C/350°F/gas mark 4) for about 5 minutes.

This rice is the perfect accompaniment to The Curry Man’s Tarka Dal.
