The perfect combo of cheese, pesto and courgette forms this stylish pizza from Saint!

Ingredients

  • 1 pizza base (we make our own using sourdough, but you can buy pre-made)
  • handful spinach (optional)
  • handful vegan cheese, grated
  • 1-2 seasoned roast courgettes, sliced
  • vegan pesto (ideally homemade) to garnish

Method

Heat the oven to 240°C (220°C fan)/475°F (225°F fan)/gas mark 8 (gas mark 7 fan).

Place the pizza base on an oven tray. Spread the pesto generously across this.

Add a layer of cheese and then the spinach leaves. Top with the sliced roast courgettes.

Cook for about 10 minutes, until crisp.
