Spaghetti with Asparagus Sauce
A tasty and easy-to-prepare spaghetti dish from MFM supporter Michela Carissimi.
Boil the asparagus in salted water until they are tender and keep the water in which they have been cooked.
Put the asparagus in a food processor together with the Philadelphia and two or three generous handfuls of Parmigiano. Mix for some seconds until you obtain a creamy sauce. Add salt and pepper according to your own taste.
Meanwhile, boil the spaghetti in the water you have previously kept, adding some more if necessary. When the spaghetti are cooked (not completely cooked but “al dente”) dry them in a colander.
Put the asparagus sauce in a frying cooking pan, in very low heat, add the spaghetti, and mix well them with the sauce for at least 1 minute. And… buon appetito!
