Thai Green Sweet Potato Curry
Quick and easy to throw together and deliciously tasty – this Thai Green Sweet Potato Curry will really hit the spot!
In a food processor, blend the curry paste ingredients together.
Over a medium heat, fry the defrosted sweet potato chunks with a tablespoon of oil for 5 minutes.
Once soft, add the curry paste and cook out for 5 minutes.
Add coconut milk and simmer for 3-4 minutes.
Serve with rice and a sprinkle of chopped coriander.
